Seafood-merchant pedigree and a counter of native and rock oysters done properly. The cooking still holds up, but the Borough flagship is now swallowed by the market-day tourist crush. Go well off-peak, or head to the calmer Battersea and South Kensington rooms.

Avoid Borough on a Saturday. The pound-an-oyster happy hour, 3 to 6, is still the move, best taken at one of the quieter sites.
