A Greek-ish restaurant above Borough Market from David Carter of Smokestak and Manteca, with Jorge Paredes formerly of Sabor. The pair spent 18 months developing their masabacha-style hummus. You enter through Agora, a downstairs bar with a separate menu, then climb to a more elegant dining room. The 450-strong wine list and dishes like labneh with crispy salt cod XO sauce show the painstaking detail.
